Fast & Easy Dinner Rolls

Ingredients
2 1/4 tsp active dry yeast1 cup warm water (110 degrees F/45 degrees C)1/4 cup dry potato flakes2 Tbsp white sugar1 tsp salt1 egg2 Tbsp vegetable oil3/4 tsp onion powder1 1/2 tsp basil2 Tbsp grated parmesan cheese2 1/4 cup flour (I use whole grain but any kind will work)
Directions
In a large bowl, dissolve yeast in warm water. Add potato flakes, sugar, salt, egg, vegetable oil, onion powder, basil, parmesan cheese, and 1 cup of the flour. Beat until smooth. Stir in remaining flour. Continue stirring until smooth, scraping batter from sides of bowl.

Cover and let dough rise in warm place until doubled, about 20 to 30 minutes.

Preheat oven to 400 degrees (200 degrees C). Lightly grease 12 muffin cups.

Punch dough down. Spoon dough into muffin cups, filling each about half full. Let rise until batter reaches tops of cups, or about 20 minutes.

Bake in preheated oven for 15 minutes.

Makes 12 rolls.
