Oyster Casserole

Ingredients
2 pt. oysters1 1/2 c. finely cut & blanched celery1 sm. can pimentos, chopped finely1 c. grated cheese2 1/4 c. cracker crumbs2 1/2 c. milk3 tbsp. flour4 oz. butterSalt & pepper to taste1 tsp. sherry
Directions
For sauce, melt butter over low heat. Add flour and blend. Stir milk in slowly with a wire whisk until smooth, adding salt, pepper and sherry, then grated cheese, celery and pimento.

Grease 3 quart casserole and layer ingredients as follows:

1 1/4 c. cracker crumbs
Oysters
Sauce

Top with cracker crumbs and bake for 20 minutes in 350 degree oven.

Serves 8.
