Zucchini and Shirataki Noodles with Cottage Cheese and Chive Sauce

Ingredients
1/3 cup Nordica fat free cottage cheese1.5 oz fresh garlic chivesgarlic powder, basil, oregano, onion powderred pepper flakes1/2 tsp lemon juicesalt + pepper1 medium zucchini, peeled into thin ribbons1 pkg Tofu Shirataki
Directions
Puree cheese through salt and pepper in a blender or food processor until smooth
Sautee zucchini ribbons and drained noodles in a nonstick saucepan until hot and zucchini is beginning to soften.
Add sauce and toss well. Heat through and serve.

    I didn't have garlic chives handy so I added 2-3 cloves of minced garlic. I thought it was very flavorful but the texture of the shirataki noodles takes some getting used to. I would definitely make this again. I'm going to plant garlic chives in my garden next year. - 12/4/09
