Thai Papaya Salad - Som Tum

1 1/2 tablespoons palm sugar 3/4 lime 2 cups green papaya, shredded 6 green beans 1 clove garlic 1 1/2 tablespoons fish sauce 1 tablespoon dried shrimp 2 chili peppers 5 cherry tomatoes 2 tablespoons peanuts, toasted Optional
Place the garlic cloves and the chilies in a mortar and mash with a pestle until crushed into chunks. Place the papaya and the remaining ingredients in the mortar and gently combine all ingredients by mixing with the pestle and a spoon. Serve cold.

I live in Thailand and thrive on this stuff. We finally found an Asian supply store where we can get green papaya when visiting family in the States. This recipe is authentic. We usually eat it with more chilies. - 11/7/10

The amount of chillies would be a personal preference
for the person making it.
