2 (1-lb) bags fresh broccoli and cauliflower florets4 tsp. extra-virgin olive oil3/4 tsp. salt1/4 tsp. black pepper2 Tbsp. slivered almonds
1. Preheat oven to 425 degrees. Spray a larged rimmed baking sheet with non stick spray.
2. Combine the broccoli,cauliflower,salt, and pepper in a large bowl. Toss to coat. Spread the vegetables on the baking sheet. Roast until golden brown and tender, about 25 mins., turning once halfway through the cooking time.
3. Mean while, place the almonds in a small nonstick skillet and set over medium heat. Cook, shaking the skillet occasionally, until lightly toasted 5-6 mins.
4. Transfer the vegetables to a large bowl. Sprinkle with the almonds. serve at once or let stand at room temp up to 2 hours.
makes 8 1 cup servings.
