Sweet-Hot Onion Jam

Ingredients
4 cups Yellow Onion, small dice2 cups Sugar1 cup Broth...Vegetable, Chicken, Beef1 cup White Wine VinegarPinch Red Pepper Flakes..or to taste2 each Bay Leaf
Directions
Place all ingredients into a heavy bottom saucepan. Bring to a boil then reduce the heat to a low simmer. Simmer uncovered allowing the liquid level to reduce by one-half, stirring occassionally. Skim off any scum that might collect. Remove the bay leaves when finished. Cool. Refrigerate in covered containers.
Makes 1.5 cups.
