Mo's Low Fat Chicken Chili

4 Tbsp extra virgin olive oil2 pounds free-range boneless, skinless chicken breast, chopped1 large organic green bell pepper, chopped1 large organic onion, chopped16 cloves organic garlic, minced2 28oz cans diced organic tomatoes or 14 diced fresh organic tomatoes4 cups organic beans (black, kidney and pinto)12oz organic tomato paste1 bunch organic cilantro, chopped4 Tbsp Fiesta low-sodium chili powder4 Tbsp organic cocoa powder1 Tbsp cumin1 Tbsp cinnamon1tsp allspice1 tsp cloves, ground1 tsp Kosher salt1/2 tsp ground black pepper12 cups water
Cook chicken, pepper, onion, and garlic in hot oil until chicken loses it's pink color and turns white. Add remaining ingredients and bring to a boil, stirring frequently to prevent sticking. Turn down heat to medium low, cover, and simmer for 15 minutes. Serve with your choice of shredded low-fat cheese, low-fat sour cream or plain yogurt, baked organic tortilla chips, chopped jalapenos, and Tabasco sauce. Makes 16 2-cup servings.

Absolutely fantastic! I actually ended up adding twice as much spice (I was making a half batch but forgot when I was adding the spices!) and the taste is incredible! Little thinner consistency than I am used to with chili but incredible with brown rice. Thank you so much for sharing this recipe! - 1/21/10

Honestly wasn't the biggest fan, but probably I played a little too loose with the recipe, plus I didn't have enough chili powder. I left out the green pepper, added spinach, lima beans and corn. Didn't add any water or olive oil as I made it in the crock pot. Good enough to eat, not make again. - 10/25/09

You can certainly adjust the amount of water to your own taste. Just remember to adjust the serving size and/or the calorie count.

I get mine at my local co-op which carries it in bulk. It is also available in the bulk spice section of Whole Foods Market . It is labeled NO sodium, not LOW sodium. Thanks for your interest. I hope you enjoy it.
