Spinach pie

Ingredients
1 10 oz. pkg. of frozen spinach, thawed & drained1 cup frozen baby artichokes, thawed1 clove garlic, minced1 cup non-fat cottage cheese1/2 cup nonfat cheddar cheese, shredded3/4 cup Egg Beaters, or other egg substitutesalt & pepper to taste
Directions
Mix all ingredients well. Pour into 9" pie plate, sprayed w/ non-stick spray.

Bake @ 350 for 45 minutes or until set.
