5 medium potatoes, peeled and cut into wedges1/2 c extra virgin olive oiljuice of one lemon2 cloves of garlic, minced 1tsp oregano1 tsp salt1/2 tsp pepper 2 c hot water
Place all ingredients (EXCEPT the water) into an 11x14 baking dish. Toss with hands to coat potatoes. Spread potatoes out evenly in one layer. Pour the water into the pan at the corner (do not pour over the potatoes). Bake at 480 F until the water starts to boil (the time this takes depends on the temp of the water when you put it in the oven). Once it boils, reduce the heat to 350 F for about an hour or until potatoes are soft and start to show just a hint of browning on top.
