Fruit Muffins

Ingredients
1 egg or egg substitute 1/2 cup applesauce or oil3/4 cup milk2 cups flour1/3 cup splenda or sugar3 tsp baking powder1 cup chopped fruit1/2 cup brown sugar
Directions
Heat oven to 400, use muffin cups or grease muffin pan. Beat egg, oil, milk and fruit together. Stir in remaining ingredients, just until moist. Batter will be lumpy. Fill muffin cups 3/4 full and bake until golden brown, about 20 minutes. YOU CAN USE ANY FRUIT IN THIS RECIPE! Just use 1 cup of the fruit of your choice!

    This recipe was very simple to make. I made this for my daughter's girl scout troop---it was my week to bring a snack. I used chopped apple in it and it was a big hit!!!
