Pollock with a mexican twist

600 g pollock, saithe/coalfishMild or medium salsa (~300 g)1 leek2 cans of baked beans in tomato saucesalt/pepperSqueeze of lemon
Cut the fish into smaller pieces, add salt, pepper and a squeeze of lemon
Cut leek into rings
In a large pan, add leeks, salsa and beans.
Bring to boil, lower heat.
Add fish to the pan, put a lid over it and let it simmer until fish is done (flaky), approx. 5 min
Serve with a green salad and whole-wheat bread (not included in the nutritional information)
