L.R. jam muffins with flax and oat bran

1-1/2 cups whole wheat flour1 cup oat bran1/2 cup ground flax seed3/4 cup brown sugar1-1/2 tsp. baking soda1-1/2 tsp. cinnamon1-1/2 tsp. nutmeg3/4 tsp. salt3 eggs1-2/3 cup buttermilk2 T. oil3/4 cup strawberry jam or jam of choice
Preheat oven to 375. Spray 24 muffin cups with non-stick spray. In a large bowl, combine all dry ingredients. In another bowl, whisk together remaining ingredients. Stir wet ingredients into dry just until moistened. Divide into muffin cups. Bake for about 20 minutes or until done. Makes 24 servings.
