Fish Filet Au Gratin

Ingredients
1 lb bass or perch fillets (or other fish)6 Tbsp margarine1/2 cup celery, chopped1/2 cup green pepper, chopped1 cup onion, chopped6 Tbsp flour1 1/2 cups mil1 tsp salt1/2 tsp pepper1/4 tsp thymedash hot sauce1/2 cup bread crumbs1/2 cup Cheddar cheese, grated
Directions
Melt margarine; add vegetables and cook until tender. Blend in flour. Gradually add milk. Stir and cook until smooth and thick. Add seasonings. Place fillets in buttered 10" baking dish. Cover with sauce. Combine bread crumbs and cheese and sprinkle on top. Bake at 450 degrees for 25 minutes. Serves 4.

    I wasn't able to make the exact recipe, but instead used this to make a vegetable sauce for my fish. It was quite delicious, and it was pretty quick and easy to do on the stove. - 11/17/10
