Microwave Baked Apple

Ingredients
Directions
1 medium apple, cored2 tbsp oatmeal, dry1 tbsp honey1/2 tbsp butter1/4 tsp cinnamon, or to taste
Core apple. Mix remaining ingredients together using a knife to cut cold butter into chunks. Fill core of apple with mixture (if all doesn't fit, just mound on top). Microwave apple in a microwave safe bowl on high for 3 minutes or until soft. Allow to cool slightly before eating.

This is a delicious baked apple recipe. It is a great way to get in an extra fruit serving plus some grains with the oatmeal. I also love that this recipe uses real food, i.e., butter and honey. These ingredients are so much better for us and taste so good. Will definitely make this again! - 6/29/11
