Sauteed Banana Served With Yogurt and Honey

Ingredients
1 large (or 2 small) banana, peeled and sliced into 1/4 inch disksabout half a tablespoon of butter, or 1/2 tbsp. sunflower or canola oil1 tbsp unsweetened cocoa powder or cinnamon (you could also use carob powder)1 tsp. vanilla extract1 cup plain, low-fat yogurt (low-fat Greek yogurt is best, for its creaminess)2 tbsp. clear honey
Directions
1. Melt the butter or heat the oil on a small, non-stick frying pan over medium heat. Add the banana slices and fry for about 2 minutes. Then add the vanilla extract (if you are using cinnamon instead of cocoa powder, add it now as well) and continue frying over medium-low heat until the banana starts to be soft enough to break down--about 5 more minutes.
2. While the banana is frying, split the yogurt into two small bowls and drizzle over one tablespoon of honey each.
3. When the banana is done, split the fried banana into two portions and scoop over the yogurt and honey, then sprinkle the cocoa or carob powder over the top. Enjoy while the banana is warm.

Note: sauteed bananas are also great with wholewheat crepes and over pancakes or waffles, or just on their own.
