Cajun Smothered Steak

2 lbs round steak1 lg onion 1 bell pepper4-5 stalks of celery0.25 cup garlic (minced or crushed)4-6 cups beef stock (can be made from boullion)3 links smoked sausageseasonings (salt, pepper [red, black, white], basil, oregano, thyme, rosemary)Rice (cooked, add 200 cal per cup)
In a black skillet combine flour and oil, brown to make a roux, set aside. In large black pot combine onions, bell pepper, celery, garlic and sausage (sliced into rounds), season to taste (see list) and heat untill vegatables are clear. Season round steak and cut into 4-6in pieces and place in pot. When the steak is begining to brown add stock and bring to a rapid boil. Slowly add roux. (you may care to add a tablespoon of kitchen bouquet for color). Allow to boil for 15-20 min then reduce heat and allow to simmer for a good while (approx 1 hr) untill steak is very tender. Serve over rice and enjoy!!
