Couscous with Lentils and Spinach

Ingredients
Lentils, 1 cup Couscous (dry), 3/4 cup Onions, raw, 1 small ChoppedGarlic, 4 cloves choppedSpinach, fresh, 1 cupWater, tap, 3 1/4 cupSalt, 1 tsp Olive Oil, 1.5 tbsp
Directions
Combine lentils, onion, garlic, water and salt. Bring to boil, reduce heat and simmer from 15 minutes. Add couscous, allow to absorb water. add spinach and stir to wilt.

Garnish with parmesan cheese (if desired).

    I noticed that the ingredient list calls for olive oil but the instructions never noted when to add it. I omitted the oil and didn't miss it. That being said, the nutritional info will be different if you omit the oil. Oh, and I left out the salt too! - 12/10/09
