Brownies with Carrot and Spinach

nonstick cooking spray3 ounces semisweet chocolate1/2 cup carrot puree1/2 cup spinach puree1/2 cup firmly packed light or dark brown sugar1/4 cup unsweetened cocoa powder2 tablespoons margarine spread2 teaspoons vanilla extract2 large egg whites3/4 cup all-purpose flour1/2 teaspoon baking powder1/2 teaspoon salt
Preheat oven to 350 degrees. Coat 8x8 baking pan with cooking spray.
Melt semisweet chocolate in double boiler or extremely low heat.
Set aside egg whites, flour, baking powder, and salt.
Combine remaining ingredients and whisk about 2 minutes.
Whisk in egg whites, then the flour, baking powder, and salt.
Pour batter into pan and bake 35-40 minutes. Cool completely before cutting.
Makes app. 12 brownies.
