Mock Roast Pork Fried Rice

Ingredients
1 Tbsp Olive or Canola Oil, 1 tbsp 1 Medium Sized Onions2 Cloves Garlic1 lb Roast Pork, lean2 cups Cooked Brown Rice, long grain4 cups Vegetable Stock or Broth1 Package Frozen Peas & Carrots Peas Favorite Salt Free SeasoningLite Soy Sauce
Directions
Makes 6 - 1 cup Servings

1. In a large pot add Vegetable stock or broth and bring to a boil.

2. Add 2 cups brown rice, cover with a tight lid and sinner until tender, aprox 40 mins.

3. Dice Onion & Garlic, set aside

2. Shred Pork, set aside.

3. Heat a large pan or dutch oven, add Oil, Onion, & Garlic, saute until clear in color.

4. Add Pork, season with any salt free seasoning if needed.

5. Add Veggies and cook until tender.

6. When rice is cool add to meat mixture & stir until well blended.

8. Add soy sauce to taste
(note: this will bring up the sodium content)

9. Enjoy!
