Ingredients
1 Pack McCormick Fajita Seasoning Mix8 Mission Carb Balance Whole Wheat Fajita size tortillas1 Tbsp olive oil3 Tbsp Lawry's Mesquite Marinade 3 Boneless Skinless chicken Breast (16 ounces/ 1 pound)1.5 cup Bell Pepper-Green1 Cup onion chopped1/4 cup water
Directions
Cut 3 chicken breasts into bitesize pieces, then marinade them in the Lawry's Mesquite Marinade for at least 30 minutes. Cut the Bell pepper and onion into slices while you are waiting. After the 30 minutes is up, heat the olive oil in a skillet and cook the chickenover medium high heat. When the chicken turns white remove it from the skillet and cook the bell pepper and onion 5-6 minutes. Return the chicken and add 1/4 cup water and seasoning packet, cook for 5-6 minutes. While you are finishing cooking heat the tortillas. I use a cast iron tortilla cooker. This makes about 8 heaping 1/2 cup servings of filling for the tortillas
I add refried beans too but I did not include them in the recipe
