No-Salt Cornbread

1 1/4 cup cornmeal 1 cup sifted flour 1/4 cup Splenda 1/4 cup soft shortening1 1/4 cup skim milk2 eggs separated
Preheat oven to 425 degrees. Combine cornmeal, flour, sugar in a bowl. Cut in shortening. Mix egg yolks & milk together then add to dry ingredients with a few swift strokes. Beat egg whites til foamy and stiff. Fold into batter carefully. Bake in ungreased 9x9x2" pan for 20-25 minutes.
Score pan 4x4. Makes 16 pieces. Serve warm. Or let sit for 24 hours and crumble for use in Holiday Dressing recipes, specifically Uncle Scott's Low-Fat, No-Salt Holiday Dressing.
