Black Bean and Sweet Potato Chili

Ingredients
2 tbsp olive oil1 red pepper1 green pepper2 teaspoons sea salt1 large sweet potato, cut in to 1/2 inch cubes1 can(28 oz) diced tomatoes4 cans (15 oz each) black beans1 tablespoon cuminI tablespoon chili powder1 teaspoon cocoa powder
Directions
Warm olive oil in a large pan over medium heat. Add red and green pepper and salt. Saute until soft about 4 minutes. Add the sweet potatoes, cook 10-15 minutes more, stir occasionally.
Add the rest of the ingredients, bring to a simmer, cover and book for 10 minutes.
Serve over brown rice. I like to eat it as a stew for lunch.
Makes 10 2 cup servings.
