Tastefully Simple Chickpea and Couscous

1 can Chickpeas (drained & rinsed)1 cup Couscous dry2 cups Frozen peas1 cup chopped red bell peppers1 cup dried cranberries2 TB fresh lemon juice1 TB balsamic vinegar1 TB Olive Oil1 sample packet of Tastefully Simple Dried Tomato & Garlic Pesto Mix
Prepare couscous according to package directions. Cook peas and allow to cool. Mix chickpeas, couscous, peas, peppers, craisins, lemon juice, vinegar, olive oil, and DT&GP until well blended. Divide into 5 portions and refrigerate until needed.
6 - 1 cup servings as a main dish over bed of lettuce
or 1/2 c as a side dish.
