Lemon Butter Chicken

Ingredients
1.5 lb chicken breast, cut into bite sized pieces2 cans mushrooms, drained2 jars capers, drained2 small jars marinaded artichoke hearts, drainedjuice from 1 lemon (or more if desired).5 cup Smart Balance.5 cup Extra Virgin Olive Oil1 Tbsp mince garlicdash salt, pepper and paprika3 cups uncooked whole wheat pasta
Directions
Heat butter and Olive Oil, medium heat. Add mushrooms, capers, salt, pepper and paprika. Bring to a boil. Add chicken and artichoke hearts. Simmer, stirring occasionally, for 30 minutes. Serve over whole wheat pasta.
