One 15 oz. can pumpkin1-1 1/2 cups Nonfat cottage cheese2 eggs1/2-3/4 cup sugar1 tsp. cinnamon1/4 tsp cloves1/4 tsp. salt or to taste1/4 tsp. allspice
Blend eggs, pumpkin, cottage cheese, spices, and sugar in a bowl. Beat for about a minute with an electric beater to break up the cottage cheese a little more. Pour into a pie pan that has been generously oiled with olive oil. Bake in a 350 degree oven for 35 minutes
