Carrot, Potato & Onion Casserole

Ingredients
8 medium potatoes4 cups chopped carrots2 cups chopped onions
Directions
1. Peel potatoes and cut into small chunks.
2. Put all ingredients into large pot, and bring to boil.
3. Reduce heat and let simmer for about 20 minutes or until potatoes are tender.
4. Mash all ingredients together.
Serve with meatballs, makes 5 large servings.
