Cranberry, Cherry, & Pecan Marmalade

.75 cup Splenda for baking1 cup water.5 cup red wine1/4 tsp ground cinnamon1/8 tsp nutmeg.5 cup dried cherries1 12 ounce package fresh cranberries.5 cup chopped pecans1/2 tsp freshly grated orange zest
1. Combine sugar, water, wine, cinnamon, and nutmeg in saucepan and bring to boil.
2. Add cherries and cook for 1 minute. Stir in cranberries; return to boil. Reduce heat and simmer until about half the cranberries pop, 10-12 minutes.
3. Remove from heat. Stir in pecans and orange zest. Let cool completely. The marmalade will thicken as it cools.
Makes 16 1/4 cup servings.
