For those of you who prefer the ham hocks, do this: Cook your ham hocks the day before. Cook, remove any meat from the bones and discard any fat. Cool and chill the broth. The fat will congeal and you can remove it. Combine the meat and broth and you are ready to use with your collards. - 11/8/12

I've never made greens without supervision, and I was desperate so I searched the Net and LOW-AND-BEHOLD found this recipe.I tried it on my immediate family and we all tasted it at the same time.I knew they were good because I could smell them after about 2 hours.
THESE ARE TRULY A GOD-SEND. - 9/21/09

I love collard greens - I eat them about 3 times a week. I haven't made them with meat but do use some rice, an onion, and vegetable or chicken broth. thanks! - 11/28/08

Thank you for the comment. I'll have to try them with rice. Do you use brown rice?

i (now) eat a vegan diet and collard greens have always been a fave so i quickly learned how to tweak it to get them just as good as before...no hamhock or any meat ofc, veggie broth instead of chicken broth and i add about a TB of liquid smoke for the smoked flavor/aroma...STILL so good! - 11/17/12
