Cajun Sauce Picante

Ingredients
1 large onion, chopped1 stalk of celery, chopped 1 bunch of green onions, chopped1 8 oz can tomato sauce2 tblsp flourTony Chachere's Original Creole Seasoning to taste1 large bell pepper, chopped1 tblsp parsley flakes1 6 oz can tomato paste1 lb stew meat1 lb chicken breast, chopped1 lb sausage, chopped3 tblsp cooking oilwater
Directions
Put stew meat, some seasoning and oil in large pot. Cook on high until water is cooked out and meat starts to stick. Add 1 cup water and cook down again. Repeat this procedure at least 3 times. (While meat is cooking, cook chicken with some seasoning until done.) When stew meat is done add vegetables and other meat and cook until vegetables are tender. Stir in flour. Add other ingredients and cover with water. Simmer 1 1/2-2 hours.
