Turkey Gumbo Soup

  • Number of Servings: 1
Ingredients
  • 3 cups turkey or chicken broth
  • 1/2 cup onion, chopped
  • 1/4 cup celery, chopped
  • 10-ounce bag of frozen okra, cut
  • 16-ounce can of tomatoes
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup rice, uncooked
  • 2 cups turkey, cooked and diced
Directions
1. Heat broth to boiling.


2. Add vegetables, seasonings, rice, and turkey.


3. Cover and cook slowly 15 minutes, until vegetables and rice are tender.


Makes 6 servings.

    I MADE THIS WITH LEFTOVER THANSKGIVNG TURKEY AND DRIPPINGS. IT IS GREAT AND MY FAMILY LOVED IT. I DIDN'T USE AS MUCH SALT AND USED BROWN RICE. I FROZE THE EXTRA TO HAVE FOR LUNCH LATER. - 11/26/07

    Wow, that is a LOT of sodium! Eliminating added salt, and using reduced or no-salt-added tomatoes and broth would make a huge difference. - 1/9/10

    I used sodium free broth and tomatoes (cuts down the sodium a lot) and left out the okra, added carrots and near the end kale in place of okra. I also used precooked brown rice (it takes much longer than 15 mins. to cook it). This was great thanks! - 2/11/12

    soup is great on a cold day . soup helps make you feel fuller .this is a great soup . you can jazz it up with anything left over in the ice box . but if you do not have anything just the way it states is ok. - 2/11/11
