Bell Pepper Meal

Ingredients
1 Cup Near East Plain Couscous 4 Bell Peppers1/2 can Black Beans1/2 Small yellow onion1 Roma Tomato2 Tsp Garlic1 Tsp Rosemary1 Tsp OreganoSalt and Pepper (to taste)
Directions
Prepare the couscous as directed on the box. (I used chicken broth instead of waer). Chop up all the vegetables except Bell Peppers and add to pan. Add Spices and couscous and mix together. Remove Stem and seeds from Bell Peppers and fill with mixture. I added some parmesean cheese to the top (this is optional). Bake on 350 for 30-45 minutes. Its ready when the bell peppers are fork tender.

    My husband and I loved this. It's healthy and quick! Took us 30 minutes or less.
    We sauteed some chicken and salad mix on the stove, and then combined it with the couscous/tomato/spice mix. Didn't use onions or black beans, but used 2 different shredded cheeses. Delicious! - 7/11/11
