Apple Oatmeal Muffins

Ingredients
2 cups apple, peeled and shredded3/4 cup whole wheat flour3/4 cup all-purpose flour1 cup oatmeal 2/3 cup firmly packed brown sugar1 1/2 tsp. baking powder1/2 tsp. baking soda1/2 tsp salt1 tsp. cinammon1/4 cup fat-free milk6 tbsp. ground flax seed meal1 tsp vanilla extract1 cup plain fat-free yogurt (or vanilla)2 egg whites
Directions
Preheat oven to 400 degrees.

Spoon flour into measuring cups and level with a knife. Plauce flour in a large mixing bowl and add oats, brown sugar, baking powder, flax seed meal, baking soda, salt and cinnamon. Stir with wisk.

Combine milk, vanilla, yogurt, and egg whites, stirring until well blended.
Add wet ingredients to flour bowl until just moist. Blot shredded apple on kitchen papaer to get rid of excess moisture, then add apple to mixture and stir.
Spoon batter into 12 cup muffin tin that is sprayed with Pam or lined with paper cups. Bake for 20 minutes.

    This is a nice tasty lightly-sweet muffin. Wound up finely dicing the apple because I hate the mess on the grater, and it worked just fine.

    DELICIOUS! I had a cup of apple pulp in the fridge left from straining home squeezed apple juice, so instead of a cup of yogurt, I put in 1/3 c Greek yogurt and 2/3 c apple pulp. I made the jumbo sized muffins and they need a good 30 minutes to bake. I also used organic oatmeal, a bit thicker cut. - 11/11/10
