Chilli & Tomato Tiger Prawns

Ingredients
1 tbsp olive oil1 medium onion, chopped8 medium mushrooms, thick sliced200g tiger prawns400g tinned chopped tomatoes1 tbsp tomato ketchupCayenne pepper
Directions
Serves 2

Warm up olive oil in pan, add chunky chopped onions and fry for 1 minute before adding the thickly sliced mushrooms and the tiger prawns. Fry for a further minute until prawns have fully changed colour then add tin of chopped tomatoes. Add a generous squeeze of tomato ketchup and a good shake of cayenne pepper (to taste depending how hot you like it!) Let mix gently simmer until reduced slightly.

Serve with wholewheat spaghetti, pasta or a crusty bread roll.
