Watergate Salad

Ingredients
1 packapge sugar free, fat free pistachio instant pudding1 20oz. can crushed pineapple in 100% pineapple juice1 16 oz. container nonfat cottage cheese1 8oz container of Cool Whip Free1.5 cups Mini Marshmallows1 cup chopped pecan pieces
Directions
Do NOT prepare pudding mix.

Mix dry pudding powder with crushed pineapple and juice. Stir until the powder has dissolved. Throw in the rest of the ingredients, stir well.

    This works well with other sugar free pudding flavors. I make it with lemon pudding, pineapple, cool whip and the flavored marshmallow that are colored for an Easter salad and put sprinkles on the top to make it festive. I leave out the nuts. - 4/6/12
