Ingredients
2 small sweet potatoes cut into rounds2 tsp extra virgin olive oil1/4 tsp black pepper1/4 tsp cayenne pepperdash kosher salt
Directions
Put all ingredients in a sealable plastic baggie. Shake until evenly mixed. Bake in foil lined baking pan for 30-35 min at 375 degrees F.

    I made this recipe tonight for me and hubby and it was a huge hit with him. It was a little bit hotter than I like. Next time I will only add 1/2 of the cayenne pepper. I also sprinkled some cinnamon on sweet potatoes after they baked. Very big hit! I will definitely make again. - 12/3/11
