Quick Leftover Pork Loin Tex-Mex Chili

Ingredients
1 lb pork loin, cubed1 medium onion, chopped4 cloves garlic, chopped1 cup mixed bell pepper strips1 packet McCormick Tex-Mex Chili Seasoning1 28 oz can petite diced tomatoes1 28 oz can tomato puree1 26 oz can dark red kidney beans2 cups frozen white corn
Directions
Chop the onions and garlic.
Cube the leftover pork.
Add the onions, garlic, and pork to the soup pot with a small amount of water and cook until the onions are tender.
Add the seasoning mix, pepper strips, corn, diced tomatoes, tomato puree, and white corn.
Stir well.
Reduce heat to simmer and continue to cook at least 30 minutes or until as thick as desired.

Makes 8 servings about 2 cups each.

    A good, basic recipe that is a little on the bland side for chili, some cayenne and salt fixed that. It's a good alternative to leftover pork vs the classic pork stir fry. Serving over rice is a nice twist. Makes at least 8 servings, plan on more leftovers. - 4/28/10
