Coconut-Cornflakes Cookies

Ingredients
3 egg whites1-1/4 cup packed brown sugar2-1/2 cups unsweetened flacked coconut1-1/2 cups gluten-free cornflakes cereal1 tsp lemon extract or fresh lemon grated peel
Directions
Preheat the oven to 170°C.
Cover a cookie sheets with a cooking wrap or grease it lightly.
Combine the egg whites with the sugar into the blender and blend on a high speed until reaches a white and creamy consistency. Combine together the coconut, the cornflakes cereal and the lemon extract. Stir in the egg whites mixture. Stir well to combine.
Drop by a tbspfuls onto the cookie sheets. Bake about 15-18 minutes. Remove from the oven, allow to cool about 5 minutes and enjoy!

    Very Good flavor! Next time I'll use wax paper because the cookies are hard to remove just using spray. Move too soon and they crumble, too late and they stick.... Really think my husband will enjoy these! :) ....He LOVES them!!!! - 8/18/11
