Cabbage Apple Side

• 1/2 head green cabbage• 1/4 cup vegetable oil• 1/4 cup apple juice• 2 tablespoons cider vinegar• 1 large onion, thinly sliced • 2 apples, halved, cored and sliced 1/8 inch thick,• dash freshly ground black pepper
1. Shred green cabbage. Place in a large ziplock bag. Add oil, juice and vinegar to bag and marinate for 1 hour, tossing often.
2. In a large deep skillet, heat the olive oil. Add the onion and cook over moderate heat until golden, about 8 minutes. Add the cabbage, with the marinade and apples and cook over moderately high heat, tossing, until wilted, about 10 minutes.
