Crockpot Scallop Potatoes

Ingredients
• 8 medium potatoes, sliced 1/8-inch thick• 1 onion, thinly sliced• 200 grams cheddar cheese, shredded• 4 slices bacon, crumbled• 1/8 teaspoon black pepper• 1 can cream of mushroom soup• 1/2 cup milk
Directions
1. Spray crockpot with non-stick cooking spray.
2. Mix soup with milk.
3. Layer in the crockpot: 1/2 of each potato slices, onions slices, cheese, crumbled bacon, and pepper. Repeat.
4. Top the entire crock with soup mixture.
5. Cover and cook on LOW for 9 to 11 hours.

    Good, basic meat and potatoes meal. I used ham instead of bacon, and added garlic. Took it to a potluck, still hot in the crock pot. It was a hit. Thanks so much for sharing. - 4/19/11
