Healthy Lemon Poppy Seed Muffins

Ingredients
3/4 cups whole wheat flour3/4 cups all-purpose flour2 tsp baking powder1/4 teaspoon baking soda1/4 teaspoon salt1 Tbsp poppy seeds2 Tbsp non-hydrogenated margarine1/2 cup sugar4 egg whites, lightly beaten1/2 cup applesauce1 cup buttermilk or low-fat plain yogurt1 Tbsp lemon zest1/4 tsp almond extract (optional)
Directions
1. Preheat oven to 375°F.

2. Whisk together the flours, baking powder, baking soda, poppy seeds, and salt and set aside.

3. In a large mixing bowl, cream margarine, applesauce and sugar together, beating until fluffy. Add egg whites one at a time, beating until incorporated after each one. Beat in the lemon zest.

4. Beat in one half of the dry ingredients until just incorporated. Beat in one third of the buttermilk. Beat in half of the remaining dry ingredients. Beat in a second third of the buttermilk. Beat in the remaining dry ingredients and then the remaining buttermilk. Do not over beat.

Makes 6 large muffins, or 8-12 smaller muffins.
