Colorful Bean Stuff

Ingredients
4 cups fresh, canned or frozen corn kernels (I use frozen white corn)2-16 oz cans black beans, drained and rinsed3 medium tomatoes, chopped1/4 cup chopped fresh cilantro1/2 medium red onion, chopped1/2 yellow or red bell pepper, chopped2-3 jalapeño peppers, seeded and mincedDressing:1/4 cup fresh lime juice1/3 cup red wine vinegar1 Tablespoon Dijon mustard2 teaspoons ground cumin3 Tablespoons olive oil
Directions
If using fresh corn, cook and cool thoroughly. Rinse beans. Chop vegetables and add corn, beans, tomatoes, cilantro, onion and peppers. In a separate bowl, whisk together dressing ingredients. Pour over vegetables and toss well. Cover and refrigerate at least two hours. Can be served as a side salad, or appetizer with dipping corn chips.

    I've tried a very similar recipe before..this stuff is great! You can also "marinate" in your favorite italian dressing. Good stuff! - 1/16/09
