5 med. Parsnips, peeled and sliced5 small Carrots, sliced3 med. Turnips, peeled and cubed1 Lg. Sweet Potato, peeled, cubed,1 small Rutabaga, peeled and cubed1 Lg. Sweet Onion, cut into wedges2 Tbsp. Olive oil1 Tbsp. minced fresh Gingerroot.1 tsp. Salt1/2 tsp. Pepper1 Cup suger free or reduced sugar Maple sryup. The darker the better. Dark Maple syrup has more flavor.Cooking spray to spray baking sheets

1. Place the fisrt seven ingredients in a large resealable plastic bag: add the oil,ginger root, salt and pepper. Seal the bag and shake to coat. Arrange vegetables in a slingle layer in two 15 in x10-in x 1-in. baking pans coated with cooking spray.
2. Preheat oven to 425. Bake ,uncovered vegetables for 25 mins., stirring once. Drizzle with syrup. Bake 20-25 mins longer or until vegetables are tender, stiring once.
