Vegan Sweet Potato Pie

Ingredients
* Sweet potato, 2 cups * Salt, .5 tsp * Maple Syrup, .5 cup * Soy Milk, 1 cup * Corn Starch, .25 cup * Nutmeg, ground, .25 tsp * Cinnamon, ground, 1.5 tsp * Allspice, .25 tsp * Ginger, ground, .25 tsp * Pie crust, frozen, ready-to-bake, 1 crust, single 9"
Directions
Boil or pressure cook peeled sweet potatoes and mash or blend them in food processor.

Add rest of ingredients and mix thoroughly.

Pour into unbaked vegan pie crust.

Bake at 400 degrees for 50-60 minutes.

    very good. If you want less chunky sweet potatos process well, flavor is really good, next time will put in less agave nectar (as vegan subsitute for processed sugar) - 1/8/11
