Red Potato - about 1 1/4 lbs small red potatoesOlive Oil, 2 tbspSmart Balance Buttery Spread, 2 TbspTastefully Simple Garlic Garlic, 2 tbsp (can use garlic powder, garlic salt, or fresh chopped garlic also)
Clean & cut potatoes into bite size pieces, drizzle with olive oil & add 2 tbsp your choice of butter, season to taste with garlic & any other seasonings you'd like. Roast in the oven at 400 degrees for about 15 minutes & then place under broiler for approximately an additional 5 minutes. Should be "crisp" on the outside & soft on the inside.
