Libby's Fiesta Goulash

Ingredients
4-5 tbsp olive oil1 cup chopped onion1/2 cup chopped green pepper1 bag frozen corn1 can black beans1 large can diced tomatoes4-5 oz precooked chicken breast (optional)cuminchilli peppersalt pepper
Directions
Heat olive oil in a non-stick skillet on med-high heat. Add chopped onions and green peppers. When onions and peppers start to soften, add frozen corn. Simmer until corn is soft and water has evaporated. Drain and rinse black beans, add to the skillet. Drain tomatoes and add to skillet. Add chicken (optional). Continue to simmer for several minutes until all ingredients are warm. Season to taste with cumin, chilli pepper, salt, and pepper.
