Spinach Frittata (real simple recipe)

Ingredients
1 cup of spinach2 egg whites1 egg yolk1/8 teaspoon of black pepper3 table spoons of part skim milk ricotta
Directions
Preheat oven to 350 degrees

Steam spinach.

Mix the egg whites, yolk, pepper together. Add spinach. Pour into a 6 inch oven safe pan, top with ricotta.

Bake for 12- 15 mins.
