Vegetable Minestone Soup

Ingredients
4 cups chicken broth4 cups V8 vegetable juice1 T. dried basil leaves1 t. salt1/2 t. dried oregano leaves1/4 t. black pepper2 medium carrots, sliced 2 medium celery stalks, chopped1 cup sliced fresh mushrooms (3 oz.)2 garlic cloves, finely chopped1 can (28 oz.) diced tomatoes, undrained1 1/2 cups uncooked small pasta (4 1/2 oz.)
Directions
1. In 4- to 5-quart pot, mix all ingredients except pasta.
2. Cover; cook on low heat for 1 hour or until vegetables are tender.
3. Stir in pasta. Cover; cook on medium for 15-20 minutes or until pasta is tender.

    This is NOT Vegetarian! Where do you think Chicken stock comes from? You will make a vegetarian sick if you feed them this. Not only that Minestone soup is traditionally made with vegetable stock. Just because there are not chunks of meat does not mean it's vegetarian!!! - 6/16/11

    I added potatoes to mine and had to put the heat to a high-medium probably because of the potatoes. The house smells sooo good now! - 12/5/10
