2 cups spinachpurple onion, a few thin slices, coarsely chopped3 to 4 T. chopped cilantro 1/2 mango, peeled and chopped in bite size pieces3 oz salmon2 T Newman's Lowfat Sesame Ginger Dressing
prepare salmon by grilling on top of stove for 2 1/2 minutes on each side. Do not over cook...only until done, when inside of fillet is no longer dark pink. While salmon is cooking, peel, slice and then chop mango. Lightly chop spinach and mix together with onion and cilantro. Toss in mango, top with salmon fillet and Newman's Lowfat Sesame Ginger Dressing. Enjoy!

wow! what a rich recipe. I love salmon but I couldn't eat it with mango. Salmon is very expensive to buy here in the UK so I can't afford to experiment with recipes I'm not sure about. For the same reason I would never grill salmon in my George Foreman, which dries chicken to a leathery mass. yuk! - 4/16/10
