Couscous Salad with Mango and Pomegranates

Ingredients
1 cup Couscous (dry), 1/2 cup Cucumber (with peel), sliced and quartered1/2 cup Yellow Pepper, chopped 2 Green Onions, sliced1/2 small red onion, sliced1/2 red chili pepper, deseeded and sliced thin1/2 cup Pomegranate Seeds1/2 cup Mango, chopped 1/4 cup Basil, chopped1/4 cup Parsley, chopped2 T Olive OilBalsamic Vinegar, to tasteSalt and PepperServe chilled, or at room temperature.Makes 4 generous servings.
Directions
Cook couscouse according to directions. Set aside. Prepare all other ingredients and combine the lot.

Adjust seasonings and quantities of ingredients to suit your taste.

    I substituted banana peppers for the chili peppers and I took out the green onions, basil, parsley, pomegrante. Then i substituted the red onion for a yellow onion and it was absolutely delicious! I think it would have been fine the other way too but my family has a lot of picky eaters. - 1/28/09
