Whole Wheat Peach Molasses Muffins

2 c. whole wheat pastry flour1 c. rolled oats4 tsp. baking powder1/2 tsp. salt1/2 tsp cinnamon1/4 tsp. nutmeg1 c. nonfat milk2 beaten eggs1/4 c. molasses1/4 c. honey1/2 c. light olive oil1.5 c. chopped peach slices
1. Combine all dry ingredients together in a large bowl. Mix well.
2. Combine wet ingredients in a separate bowl. Mix well.
3. Pour wet mix into dry ingredients bowl. Mix just until combined (mixture will be lumpy)
4. Line muffin tins with paper liners, and fill each cup up 1/2 - 2/3 full. Muffins will not rise too much.
5. Cook at 400 degrees F. for 18-20 minutes.
Makes 24 muffins.
